As I sit here writing this post, I find myself in amazement that summer is soon coming to an end.

And, when I mean “summer,” I really mean the time the girls have been on summer vacation.  How did it go by so quickly?

This summer, we had a lot of fun and made a ton of frozen treats, like these orange creamiscle popsicles and this lemon blueberry sorbet. <— omg you have to try those, btw.

But one of my all-time faves has got to be these watermelon mint popsicles right here.  They’re just the perfect summer treat.

First off, watermelon is just the best thing ever, especially during the summer when it’s sweet, rich, and super juicy.  While you could have it just freshly cut on its own, I love making it into homemade watermelon popsicles.

Adding in just a touch of fresh, sweet mint and a squeeze of lime is all you need to top it off.  The mint gives a subtle sweetness and the lime makes the watermelon pop.

It’s simple perfection, just like summer.

To say our freezer has been jam-packed with homemade popsicles, ice creams, and sorbets this summer would be an understatement.  It’s been really fun making all sorts of flavor combinations with the girls.  And they’ve sure eaten their fair share.

While I think we’re all a little ready to get back to some normalcy around here, it has been nice to have my lil’ taste testers and popsicle eaters around so much this summer.

Love them so much.

Some tips on picking out the perfect watermelon…

  1. Look for a watermelon that feels heavy for its size.  If it seems like it should weigh more for its size, put it back and don’t stop until you’ve found one that seems oddly heavy for the same size as the others.  That’s your keeper.  
  2. Find the spot where the watermelon was laying on the ground while it grew.  If it has developed a creamy yellow spot where it right where it laid on the ground, it’s sure to be nice and ripe.  
  3. Finally, gently knock on the outside of the watermelon.  If it has a hollow sound when, as opposed to a dull sound, it’s good to go into your popsicles.

That all being said, if your watermelon isn’t the sweetest watermelon ever, you can always add a touch of raw honey into these popsicles and that should do the trick.

Here’s to sweet watermelon, popsicle sticks, and even sweeter memories with my lil’s this summer.  It’s been fun and I can’t wait to see where this year takes us.

Watermelon Mint Popsicles

These Watermelon Mint Popsicles are easy, sweet, and refreshing - and just perfect for summer!

Recipe type: Ice Cream, Popsicle, Dessert, Clean, Gluten-Free
Difficulty Level: Easy
Serves: 6 popsicles
Ingredients
  • 5 cups cubed seedless watermelon
  • 1 tbsp. fresh mint leaves, chopped
  • 1 tbsp. freshly squeezed lime juice (about ½ lime)
  • optional: 1 tbsp. raw honey
Instructions
  1. Add the cubed watermelon to a blender, followed by chopped fresh mint and lime juice. (If your watermelon isn’t too sweet or you just want to add a little extra sweetness, you could add a tablespoon of raw honey as well, but it’s optional.)
  2. Blend until well pureed.
  3. To remove the bits of watermelon and mint leaves, press the blended mixture through fine mesh sieve or cheesecloth. This will leave you with a smooth, watermelon liquid mixture.
  4. Pour the liquid into popsicle molds and freeze for an hour in order to solidify enough to add popsicle sticks, then freeze another 3-5 hours to set.
