Ingredient Notes

Chia Seeds

Either black or white chia seeds work. I like to use white chia seeds here to make this pretty Strawberry Matcha Chia Pudding even prettier, but they can be used interchangeably.

Pure Maple Syrup

Add sweetness in a pure, unprocessed way with maple syrup. This recipe takes only 1 tablespoon. Other sweeteners can be raw honey or monk fruit, for example.

Pure Vanilla Extract

Give your matcha pudding a subtle boost of flavor with pure vanilla extract. It's just enough to enhance the flavor for an even more delicious taste.

Unsweetened Coconut Milk

Unsweetened coconut milk has lots of uses and it's perfect for Strawberry Matcha Chia Pudding. It's a creamy and dairy-free way to complete the recipe. Read my post on coconut water versus coconut milk to learn more about its benefits. You can swap for any milk of choice, however.

Matcha

Matcha powder that's a vibrant green means good quality matcha with antioxidants, L-theanine, and green chlorophyll (and better taste!). Stone ground matcha is a powder and mixes well in water and recipes. Read more here on the benefits of matcha.

Strawberries

Look for bright red strawberries for optimum sweetness. I really love the combination of strawberries and matcha, but you can swap it with any fresh fruit for this recipe. You can also leave the fruit out entirely if you prefer.

FAQs

How Do I Store Chia Pudding?

Strawberry Matcha Chia Pudding can be kept in the fridge for up to 5 days. I store mine in a sealed mason jar for optimal freshness.

Why Is My Chia Pudding So Thick?

Occasionally, chia pudding can thicken to a consistency that you find too thick. Gradually stir in a teaspoon of coconut milk at a time to reach the consistency you like. If your chia pudding isn't thick enough, add a teaspoon of chia seeds at a time, let it sit for 10 minutes, and see if it's to your liking.

How To Make Strawberry Matcha Chia Pudding

This marvelous pudding recipe is SO EASY.
Here are the steps:
1. Mix the chia seeds, pure maple syrup, pure vanilla extract, and unsweetened coconut milk in a bowl.
2. Set in the fridge for 30 minutes or overnight.
3. Stir, and then add in the matcha powder.
4. Add the pudding and berries to a jar and enjoy!
Yep, it's that simple!

How long should I let chia pudding sit before it thickens?

You can eat the chia pudding in 30 minutes. However, the longer it sits, the thicker the consistency gets. So you may want to let it thicken in the fridge overnight.

Is Matcha Good For You?

Yes! Made from a powdered form of high-grade green tea, matcha has many beneficial compounds and antioxidants that make it terrific for your overall health.

Matcha is known to:
- Boost energy
- Improve brain health
- May aid in weight loss
- May protect the liver

Equipment

Ingredients

  • ¼ cup chia seeds
  • 1 tablespoon pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup unsweetened coconut milk
  • 1 teaspoon matcha, plus more for stronger matcha flavor
  • 3 strawberries, thinly sliced

Instructions

  • Add the chia seeds, pure maple syrup, pure vanilla extract, and unsweetened coconut milk to a mixing bowl.
  • Stir this all together and place in the fridge to set. It’s ready to go in just about 30 minutes, but you could leave it overnight if you want.
  • Remove it from the fridge and stir it together. You can see the chia seeds have formed a gel and the mixture is thicker, more like a pudding.
  • Add the matcha powder to the prepared vanilla chia pudding. Stir to combine until it’s completely mixed. Then, add a little of the matcha chia pudding to the bottom of a jar, approximately ¼ of the way up in the jar.
  • Using thinly sliced strawberries, place them around the inner sides of the jar and then fill to the top with the remaining matcha chia pudding. To serve, add a couple strawberry slices.

Notes

If you find the matcha to be little too bitter for your taste, you can add in a little extra pure maple syrup in with the matcha chia pudding, but sweet strawberries can also balance it out.
